In case anyone else is wondering, when trying to change the primary poller to another server, it adds an additional entry to the "engines" table in the database, resulting in two entries marked as "primary".  This causes a number of random issues as services see the original primary poller first and try to talk to it.  Even with the same IP, it would throw an error because the names didn't match.  There are probably a couple valid ways to fix this, but what we ended up doing was modifying the nodes table to change the polling engine number for the existing nodes to the number of the new poller.  Then in the Settings -> Polling Engines section, it allowed us to delete the old poller as there were no more nodes assigned to it.
